Our special for February 15th was red snapper from John Yi fish market in Phillys famed Reading Terminal Market. Red snapper is a very easy fish to prepare and can be done quickly and simply. 

Tonight we prepared it a special way as we know the supermodel was dining in tonight. We prepared a marinade similar to our mojo pork but cooked the snapper in this marinade instead of letting it sit for a while.

In addition to keep the flavor of the citrus after cooking we prepared a citrus cream sauce with heavy cream, white wine, sweet onion, grated orange peel, orange juice and butter. This simple yet classic preparation did the trick and was a delicious dining experience.
